My favorite recipe is a basil pesto that is very rich.
6 cups of basil leaves, 1 cup of  lightly toasted macadamia nuts, 3  peeled garlic cloves toasted in 1/2 tsp of olive oil, 2 cups of freshly grated parmesean cheese, 1 and 1/4 cup of extra virgin olive oil, one or 2 tsps of sea salt. (depending on how salty the cheese is.)Process all ingredients  except olive oil in food proc. When you have a rough chop, slowly stream in olive oil while processor is running. It's up to you how chopped you want it.
I serve it on small pieces of  fresh french bread that has a little  unsalted butter on it. Also can be used as a stuffing for many meats, chicken.  Wonderful with a light merlot.
